Broccoli Cheddar Soup

Serving Size

  • Yields 2½ Gallons

Ingredients & Measurements

  • Chef’s Companion® Cream Soup Base (prepared)4 ½ quarts (1 Full Bag)
  • Broccoli (florets, chopped) – 6 ½ pounds 
  • Cheddar Cheese (shredded) – 3 ½ pounds
  • Heavy Cream (optional) – 1 cup
  • Onion (¼” diced) – 1 cup
  • Butter (unsalted) – 4 TBSP
  • White Pepper (ground) – ½ tsp 

Instructions

  1. Melt butter in a hot appropriate size pan.   
  2. Add onions and sauté until transparent. 
  3. Add broccoli and sauté for 2 minutes. 
  4. Add prepared Chef’s Companion® Cream Soup Base and heavy cream. Bring to a boil, reduce heat to a simmer, stirring for 10 minutes.  
  5. Add cheddar cheese. Stir until cheese is melted, being careful not to let soup scorch. 
  6. Season to taste with white pepper. 
  7. Serve hot and enjoy!
