Creamy Tomato Basil Soup

  • Yields 2 Gallons

Ingredients & Measurements

  • Chef’s Companion® Cream Soup Base (prepared)4½ quarts (1 Full Bag)
  • Tomatoes (diced in juice) – 2 ½ quarts
  • Heavy Cream (optional) – 2 cups
  • Tomato Paste – 1 ½ cup
  • Basil (fresh, chiffonade)  – ½ cup
  • Garlic (granulated) – ½ tsp 
  • White Pepper (ground) – ½ tsp

Instructions

  1. Add all ingredients except basil to a hot appropriate size pan. 
  2. Bring to a boil, reduce heat to a simmer, stirring for 10-15 minutes. 
  3. Turn off the heat and add basil. 
  4. Serve hot and enjoy!
