Curried Butter Chicken

Ingredients & Measurements

  • Chef’s Companion Chicken Gravy (prepared)® – 4 quarts (1 Full Bag)
  • Coconut Milk (unsweetened)   – 1 ½ quart
  • Heavy Cream – 1 ½ cup
  • Butter (unsalted) – 1 cup 
  • Tomato Paste – ½ cup
  • Ginger (paste) – 3 TBSP
  • Garlic (chopped) – 1 ½ TBSP
  • Garam Masala  – 3 tsp
  • Paprika  – 1 ½ tsb
  • Turmeric   – 1 ½ tsb
  • Fenugreek  – 1 ½ tsb
  • Cardamom  – tsb
  • Cayenne  – To Taste
  • Cinnamon  – To Taste
  • Bay Leaf (ground)  – To Taste

Instructions

Add all ingredients except butter to a hot saucepan and mix until combined.  

  1. Bring to a simmer.  
  2. Turn off heat and mix in butter.  
  3. Serve on grilled chicken or grilled vegetables. Or use to prepare a classic Indian Butter Chicken.

Note: For a sweeter curry, replace unsweetened coconut milk with sweetened coconut milk.
