Curried Chicken Salad

Ingredients

  • Chef’s Companion Chicken Ranch Dressing Mix, prepared 
  • Mango Chutney (or sub Apricot Preserves) 
  • Curry Powder 
  • Chicken, cooked and chopped 
  • Almonds, sliced, toasted 
  • Raisins (golden preferred)

  • 1 qt

  • 1/2 c 
  • 1 Tbsp 
  • 3 qt 
  • 1 c
  • 1 c

Instructions

  1. Prepare ranch dressing according to the instructions on the bag. 
  2. Blend ranch dressing, mango chutney and curry powder together in a blender or food processor until combined. 
  3. In a large container, mix the curry dressing, chicken, raisins and almonds. 
  4. Refrigerate until serving. 
  5. Optional: Add chopped cilantro and sliced green onions.
