Lime Pineapple Mint Punch

  • Sugar 
  • Water 
  • Pineapple Juice 
  • Gin 
  • Club Soda 
  • Mint leaves, fresh 
  • Ice 
  • True Lime 



  • 1/2 c
  • 1/2 c
  • 3 qt
  • 1 l
  • 1 l
  • 1 c
  • For serving 
  • 2 1/2 tsp dissolved in 1 c water 



  1. In a small saucepan, make the simple syrup by combining the equal parts of sugar and water; bring to a boil. 
  2. Reduce heat and simmer until the sugar dissolves, 1 to 2 minutes. Set aside to let cool. 
  3. In a large bowl, combine the simple syrup, pineapple juice, gin, club soda, True Lime water, and most of the mint (reserve some as garnish). 
  4. Serve over ice. Garnish with a sprig of fresh mint.
