Portuguese Pepper Gravy

Serving Size

  • Yields 2 Gallons 

Ingredients & Measurements

  • Chef’s Companion® Pepper Gravy (prepared)4 ½ quarts (1 Full Bag)
  • Chorizo (raw, chopped) – 4 pounds
  • Heavy Cream – 1 quart
  • Onion (chopped) – ¼ cup 
  • Garlic (chopped) – 2 tsp

Instructions

  1. In a hot saucepan with olive oil, cook chorizo for 3-5 minutes or until done.  
  2. Add onions and garlic. Sauté for 2 minutes, stirring to break up the sausage.  
  3. Add Chef’s Companion® Pepper Gravy and heavy cream. Bring to a boil and simmer for 2-3 minutes.  
  4. Enjoy on a variety of artisan breads.
