Serving Size

  • Yields 2 ½ Gallons

Ingredients & Measurements

  • Chef’s Companion® Cream Soup Base (prepared) – 4 ½ quarts (1 Full Bag)
  • Cheddar Cheese (shredded) – 5 pounds
  • Bacon (chopped, raw) – 1 ½ pound
  • Beer – 3 cups
  • Heavy Cream (optional) – 3 cups
  • Onion (¼” diced) – 2 ½ cups
  • White Pepper (ground) – ½ tsp

Instructions

  1. Sauté bacon in a hot appropriate size pan on low heat until brown and crispy. 
  2. Add onions, stir, then add beer. Let simmer for 2 minutes.  
  3. Add prepared Chef’s Companion® Cream Soup Base and heavy cream. Bring to a boil, reduce heat to a simmer, stirring for 5 minutes. 
  4. Add cheddar cheese and stir until cheese is melted, being careful not to let soup scorch.  
  5. Season to taste with white pepper.  
  6. Serve hot and enjoy!
