Stroganoff Poutine

Serving Size

  • Yields 2 ¼ Gallons

Ingredients & Measurements

  • Chef’s Companion Brown Gravy (prepared)4 quarts (1 Full Bag)
  • Mushrooms (sliced) – 4 pounds
  • Red Wine – 1 ½ quart
  • Sour Cream – 2 pounds 
  • Mustard (Dijon) – 2 ½ cups
  • Olive Oil  – ½ cup
  • Tomato Paste   – ½ cup
  • Black pepper (coarse)  – 2 tsp

Instructions

  1. In a hot saucepan with olive oil, sauté mushrooms for 2-3 minutes. 
  2. Add red wine and bring to a boil.  
  3. Add Chef’s Companion® Instant Brown Gravy Mix, mustard, tomato paste, and black pepper. Simmer for 2-3 minutes.  
  4. Turn off heat and mix in sour cream. 
  5. Serve hot over fries and enjoy!
