Wild Mushroom and Herb Gravy

  • Yields 2 Gallons

Ingredients & Measurements

  • Chef’s Companion® Brown Gravy (prepared)4 quarts (1 Full Bag)
  • Wild Mushrooms (sliced) – 6 pounds
  • Heavy Cream 1 quart
  • Brandy – 1 cups
  • Butter (unsalted) – 4 TBSP 
  • Thyme (fresh, chopped) – 2 TBSP
  • Parsley (fresh, chopped) – 2 TBSP
  • Rosemary (fresh, chopped)  – 4 TBSP
  • Garlic (chopped)   – 4 tsp
  • Black Pepper (coarse, ground)  – 2 tsp

Instructions

  1. Melt butter in a hot saucepan. 
  2. Add garlic and wild mushrooms. Sauté for 2-3 minutes. 
  3. Add brandy and simmer for 2-3 minutes.  
  4. Add Chef’s Companion® Brown Gravy, heavy cream, herbs, and black pepper. Bring to a boil and simmer for 4-5 minutes.  
  5. Serve on your favorite roasted or grilled meats.
